So yesterday I moved house - well, my friends moved all my stuff (and put it away, lets be honest!) and all day I've been thinking about making a mushroom frittata.
How did this start? When I was in a kitchen shop (a very dangerous place for my credit card!) I bought this awesome square frypan that I knew was going to be perfect for a frittata because I could cut it diagonally and it would be a good serving size.
Some of the girls came around this evening for Good Friday drinks and nibbles and at 8:30pm Sarah and I decided that we should probably eat dinner (this was after a mission to find the gas meter box!). I must have spoken about this frittata a bit because it was the chosen dish for dinner over 'something with chicken'.
It tasted amazing and it was the perfect meal for the end of two days of moving.
Here's the recipe:
3 eggs
4 mushrooms, sliced
15g onion, diced
30g grated cheese
1/2 zucchini, grated
Directions
Melt some butter in a pan and cook the mushrooms until brown.
Add the onion and zucchini then pour the beaten eggs on top.
Cook for 3-4 minutes then top with cheese and place under the grill until golden brown.
Serves 2. Each serve is approx 190 calories.

Exceptional
Well tonight is our last night in New York and we are currently sitting at the bar in Lincoln Center waiting for the NY Philharmonic concert (with a glass of Moët - of course!)
This morning was my last long run in my marathon training and over the past couple of runs something has happened. I started to believe in myself. It's amazing what you can accomplish when you believe in yourself.
Over the past year I have learnt not to define myself by what others think of me. I have an amazing support network of women who love and appreciate me for who I am and support my crazy ideas (like - 'I'm going to write a cookbook' or 'I'm going to run a marathon').
Even tonight as I was starting to let the doubts and anxiety over this marathon creep in I've had such amazing support (or just ass kicking) from these women reminding me that I can do this. I have put in the work and in 10 days I'll be running a marathon.
What I'm looking forward to about 2013 is letting go of the fear. Fear strips you of your confidence and stops you from experiencing life in all its awesomeness. Well I'm not going to live like that anymore!
2013 is going to be EXCEPTIONAL.
What will that mean? I don't really know yet. But I do know that in everything I do I'll be looking at how I can be the absolute best version of myself while doing it. I know that is going to mean some tough choices along the way and not just saying yes to something that sounds good at the time but will drain the life out of me along the way.
Tomorrow we head to Las Vegas and then San Diego before heading to Orlando next Thursday ahead of the marathon Sunday week.
So until next time...
